Homemade Caramel Candies

Oh Martha Stewart, how I love thee...
Let me count the ways...

So, I'm not IN LOVE with Martha Stewart but I do LOVE her recipes! I have yet to come across a recipe of hers (or that she recommends) that hasn't turned out AMAZING & this one is NO exception!

I attempted to make homemade caramels once before and it was a disaster so I didn't even blog about it (but in the future, I'll also blog my "failures" so you can learn what NOT to do as well)!

The December issue of Martha Stewart Living (available now) had this recipe and it just looked so simple that I wanted to try it out! Before I go any further, I will tell you I haven't cut & wrapped them yet (they are still setting up) but I DID lick the spatula clean after I poured it and it tastes DELICIOUS! So delicious, in fact, that I'm not sure how many pieces will end up as Christmas gifts and how many will just end up in my stomach! LOL!

Well worth the work & I cannot wait to start cutting & wrapping so I can test the "final" product! Here are some photos of me making them!

Got the cream, corn syrup, butter & sugar ready to go!

Set up the pan BEFORE I started bringing the mixture to a boil!

Brought it to a boil then lowered the temp to med/high.

Waiting for it to come to temperature (248 degrees).

Almost to temp! Look at the gorgeous color!

There are a few bubbles of air. I think next time I'll tap the pan a few times to get the air out better.

Overall VERY impressed with the ease & flavor of this recipe! I'll definitely be making these again!
